Zucchini Bread Recipe



Ingredients:
2 ½ cups sugar
3 eggs
3 cups flour
3 tablespoons vanilla extract
1 cup oil
2 cups zucchini (grated)
¼ teaspoon salt
1 teaspoon baking soda
¼ teaspoon baking powder
1 cup nuts (optional)
3 teaspoons cinnamon

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. Combine all of the ingredients and mix well.
Step 2: Pour mixture into 2 greased loaf pans and bake for 1 hour.
Step 3: Remove from oven and allow bread to cool before removing.

Beijing Beef Recipe


Ingredients:
1lb steak (sliced into thin strips)
6 tablespoons cornstarch (for dusting)
oil (for frying)
Marinade-
1 egg
¼ teaspoon salt
2 tablespoons water
1 tablespoon cornstarch
Sauce-
4 tablespoons water
4 tablespoons sugar
3 tablespoons ketchup
2 tablespoons vinegar
¼ teaspoon crush chili pepper
2 teaspoons cornstarch
Vegetables-
1 teaspoon garlic (minced)
1 medium red bell pepper (diced)
1 medium green bell pepper (diced)
1 medium white onion (sliced)

Cooking Instructions:

Step 1: Cut beef into thin strips . In a bowl of sealable bag combine all marinade ingredients and mix well. Add beef slices and marinate for 15 minutes.
Step 2: While beef in marinating mix all of the sauce ingredients together in a bowl and refrigerate.
Step 3: When the beef is done marinating coat the beef slices with 6 tablespoons of cornstarch. Remove any access cornstarch and deep fry (either in a deep fryer or wok) beef slices in batches until floating or golden brown. Drain on paper towels.

Step 4: Add a couple tablespoons of oil to the wok and add minced garlic and stir fry for 10 seconds. Add red and green bell peppers and onions and stir fry for 2 minutes. Remove vegetables and set aside.

Step 5: Pour sauce into the wok and heat until boiling. In a serving dish add beef and vegetables and coat with the sauce.


Crab Quiche Recipe



Ingredients:
1 (9 inch) unbaked pie crust
½ cup mayonnaise
3 eggs (beaten)
1 cup of crab meat (or imitation crab)
1 cup shredded Swiss cheese
½ cup milk
2 tablespoons all-purpose flour
½ cup green onions (chopped)
salt (optional, to your taste)
pepper (optional, to your taste)
cayenne pepper (optional, to your taste)

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. In a bowl mix together eggs, milk, flour and mayonnaise until well blended. Stir in crab meat, cheese and green onions. Pour over pie crust.

Step 2: Bake in the oven for 40-45 minutes or until a knife comes out clean.

Chicken Carbonara Recipe



Ingredients:
1lb boneless skinless chicken breasts (cut into bit size pieces)
½ lb bacon
12 ounces spaghetti noodles
½ cup parmesan cheese
2 eggs
¼ cup heavy cream
½ teaspoon salt
½ teaspoon pepper
¼ cup white wine
¼ cup chicken broth
1 tablespoon lemon juice
1 cup frozen peas

Cooking Instructions:

Step 1: In a small bowl mix together parmesan cheese, eggs, heavy cream, salt and pepper. In another bowl mix together wine, chicken broth and lemon juice. Set both aside.
Step 2: Bring a pot of water to a boil for cooking the noodles.
Step 3:
In a large skillet cook bacon in batches until crispy. Drain on paper towels.

Step 4:
Fry chicken pieces in bacon fat until fully cooked. Drain on paper towels.
Step 5: Deglaze the pan with wine mixture scraping up any bits on the bottom of the pan. Cook for about 2-3 minutes. Place noodles in boiling water and cook according to package directions.

Step 6: While noodles are cooking crumble bacon slices into bits and in a large bowl mix chicken, bacon bits, wine glaze mixture, and parmesan/egg mixture. Drain noodles and shake to get rid of any extra water.
Step 7: Add peas and egg mixture to piping hot noodles and mix well.

Egg Foo Yung Recipe



Ingredients:
6 eggs
1 cup fresh bean sprouts
¼ cup green onion (minced)
¼ cup bamboo shoots (minced)
4 water chestnuts (minced)
¼ cup slivered ham
1 teaspoon soy sauce
oil (for cooking)
Foo Yung Sauce-
1 cup chicken broth
1 tablespoon soy sauce
2 teaspoons sugar
2 teaspoons vinegar
1 tablespoon cornstarch
2 tablespoons water

Cooking Instructions:

Step 1: In a bowl mix together eggs, vegetables, ham and soy sauce.
Step 2: Heat a skillet with a little bit of oil or cooking spray and add 1/3 cup of the egg mixture. Cook either as you would a pancake, once lightly browned on one side flip and brown the other, or fold as you would an omelet. Repeat until the egg mixture is gone.

Step 3: To make foo yung sauce – Add chicken broth, soy sauce, vinegar and sugar to a sauce pan. Bring sauce to a boil. Meanwhile combine cold water and cornstarch in a small bowl. When the sauce starts boiling, stir in the cornstarch mixture. Cook, stirring until sauce is thickening and bubbling.

Mandarin Chicken Recipe



Ingredients:
2 boneless skinless chicken breasts
vegetable oil or cooking spray
½ tablespoon sugar
½ teaspoon salt
¼ teaspoon of garlic powder
Mandarin Sauce-
2/3 cup sugar
¼ cup soy sauce
1 tablespoon lemon juice
1 teaspoon fresh garlic (minced)
1 teaspoon fresh ginger (minced)
¼ cup water
4 teaspoons cornstarch

Cooking Instructions:

Step 1: Pound chicken breasts with a mallet to an even thickness and season both sides with sugar, salt, and garlic powder. Grill chicken 4-6 minutes on each side or until no longer pink inside. Remove from grill and cut into bit sized strips. Set aside.

Step 2: In a bowl combine sugar, soy sauce, lemon juice, garlic and ginger. Pour into a wok or sauce pan. Heat the mixture until almost at a boil. Combine cornstarch and water. Once the sauce starts to boil add the cornstarch mixture and stir until thickened.
Step 3: Add grilled chicken to the wok and coat with the sauce. Simmer until heated thoroughly.

Banana Bread Recipe



Ingredients:
¾ cup butter (softened)
1 ½ cups sugar
3 bananas (blackened)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
2 cups flour
¾ teaspoon salt
½ cup buttermilk
½ cup nuts (chopped)

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees, and In a mixing bowl cream butter and sugar. Mash bananas by hand and add to mixture. Add in eggs, vanilla extract, baking soda, flour and salt. Stir in buttermilk and chopped nuts.

Step 2: Pour mixture into 1 or 2 greased loaf pans.
Step 3: Bake at 350 degrees for 1 hour and 15 minutes (or until a toothpick comes out clean or almost clean).

Breaded Shrimp Recipe



Ingredients:
1lb large shrimp (peel and deveined, and butterflied if you choose)
4 cups water
1 ½ cups corn starch
2 eggs
2 cups breadcrumbs
¾ teaspoon garlic powder
¾ teaspoon onion powder
Oil (for deep frying)

Cooking Instructions:

Step 1: In a large bowl mix water, cornstarch and eggs. On a plate or using a shaker bag mix breadcrumbs, onion and garlic powder.
Step 2: Dip the shrimp into the cornstarch mixture until completely coated and then roll them in the bread crumb mixture. Stir the cornstarch batter, and then dip the shrimp back into the mixture and roll in breadcrumbs once more.
Step 3: Deep fry shrimp in batches until golden brown. Drain on paper towels.

Buttermilk Pancakes Recipe


Ingredients:
2 eggs
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
4 tablespoons butter
½ teaspoons vanilla extract
oil or cooking spray (for cooking)


Cooking Instructions:

Step 1: In a large bowl beat eggs. Add buttermilk, butter and vanilla and mix well. Add flour, sugar, baking powder, baking soda, and salt. Mix well until smooth and let batter set for a few minutes.
Step 2: Heat griddle or pan over medium heat. Brush lightly with oil or spray with cooking spray. You can test to see if the pan is hot enough by adding a few drops of water, if or when the drops start to dance its hot enough.
Step 3: Pour ¼ cup of batter onto the griddle. Cook on the first side until bubbles that form start to pop. You can also gently lift up the pancake to make sure the bottom is not overcooking, if it is the pan may be too hot and you will need to adjust the heat. Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone.

Cashew Chicken Recipe



Ingredients:
2lbs boneless skinless chicken breasts (cut into 1” chunks)
2 cups flour
5 teaspoons cornstarch (divided)
2 teaspoons baking soda
3 eggs (beaten)
oil (for frying)
Sauce-
2 cups chicken broth
2 tablespoons oyster sauce
1 tablespoon sugar
2 tablespoons soy sauce
1 teaspoon pepper
1 large green pepper (sliced)
1 large onion (sliced)
2 cups cashews
1/3 cup green onions (chopped)

Cooking Instructions:

Step 1: In a bowl mix flour, baking soda and 1 teaspoon of cornstarch. In another bowl beat the eggs. Dip chicken pieces first then the flour mixture, then in the egg mixture and then again in the flour mixture.
Step 2: Fry in oil in a wok or in a deep fryer at 350 degrees in batches until golden brown. Drain on paper towels.

Step 3: Heat a tiny bit of oil in the wok and stir fry green pepper and onions for 2-3 minutes. Remove from wok and set aside.

Step 4: To make the sauce- in a bowl mix chicken broth, oyster sauce, soy sauce, sugar, pepper, and 4 tablespoons of cornstarch.
Step 5: Pour sauce into wok and cook over medium heat stirring until well blended and sauce thickens. In a bowl pour sauce over chicken pieces, add green peppers and onions. Mix well and garnish with cashews and green onions. Serve with white rice.

Oatmeal Cookies Recipe



Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup butter (softened)
1 cup sugar
1 cup dark brown sugar
2 large eggs
2 teaspoons vanilla extract
3 cups oats
1 ½ cups chocolate chips or raisins

Cooking Instructions:

Step 1: Preheat the oven to 350 degrees. In a bowl mix together flour, baking soda, baking powder and kosher salt. Set aside.
Step 2: Beat together on low speed, butter, sugar, brown sugar, eggs and vanilla. Increase the beating speed and beat together until fluffy.
Step 3: Stir in the flour mixture into the butter mixture until no flour is visible. Stir in oats and chocolate chips.

Step 4: Fill a cookie scoop or a tablespoon with dough. Drop one by one onto a greased cookie sheet. Bake 11-13 minutes until golden but still moist inside. Remove from the oven and fully cool.

Coconut Shrimp Recipe



Ingredients:
Canola oil (for deep frying)
½ lb large uncooked shrimp (peeled and deveined)
1 ½ cups all purpose flour (divided)
2 tablespoons sugar
¼ teaspoon salt
1 cup milk
1 cup Panko Japanese style breadcrumbs
½ cup flaked coconut
Dipping Sauce-
½ cup sour cream
¼ cup pina colada non-alcoholic drink mix
1/4 cup crushed pineapple (canned)
2 tablespoons sugar

Cooking Instructions:

Step 1: In a bowl combine all the ingredients for the dipping sauce, mix well. Cover and refrigerate until needed.
Step 2: In a medium bowl mix ¾ cup of flour, and add milk and mix well. Let batter sit for a few minutes. In another bowl or pie plate mix another ¾ cup of flour, sugar and salt. In a third bowl mix Panko breadcrumbs and flaked coconut.

Step 3: Butterfly each shrimp. Use a sharp knife and cut through the back of the shrimp (where the vein was) so you can spread it opened. Leave the tail intact.

Step 4: One by one dip each shrimp in the flour mixture, then the batter mixture and then the breadcrumb/coconut mixture. Coat evenly.
Step 5: Deep fry the shrimp in batches at 350 degrees for 2-3 minutes or until golden brown. Drain on paper towels. Serve with dipping sauce.

Chicken Caesar Salad Recipe



Ingredients:
2lbs boneless skinless chicken breasts
¾ teaspoon salt
1 tablespoon brown sugar
½ teaspoon garlic powder
½ teaspoon onion powder
1 head romaine lettuce (washed and torn into pieces)
shredded parmesan cheese
Croutons-
2 cups of white bread (torn or cut into pieces)
3 tablespoons virgin olive oil
2 garlic cloves (crushed)
¼ teaspoon salt
Dressing-
2 tablespoons mayonnaise
1 tablespoon lemon juice
½ teaspoon Dijon mustard
½ teaspoon Worcestershire sauce
1 oil packed anchovy (minced)
¼ cup olive oil

Cooking Instructions:

Step 1: For the dressing- In a small bowl whisk together mayonnaise, lemon juice, mustard, Worcestershire sauce, and minced anchovy. Then last whisk in olive oil. Refrigerate until needed (whisk once before using).

Step 2: For the croutons- Preheat the oven to 350 degrees. Tear or cut bread into pieces and place in a bowl. In a small bowl mix crushed garlic, olive oil, and salt. Drizzle oil mixture over bread pieces and toss to coat. Lie out bread pieces in a single layer on a baking sheet and bake for 15 minutes turning half way through for even browning. Allow to cool until needed.
Step 3: For the chicken- Between 2 sheets of wax paper pound chicken breasts with a mallet until at an even thickness. Season chicken breasts on both sides with salt, sugar, garlic powder and onion powder. Grill chicken on an outdoor grill or indoor grill pan for 5 minutes on each side of until no longer pink inside. Slice chicken into small strips.
Step 4: To make the salad mix shredded lettuce and chicken bits. Top with croutons, dressing and shredded parmesan cheese.

Bourbon Chicken Recipe



Ingredients:
2lb boneless skinless chicken breasts
oil (for frying)
cornstarch (for dusting, optional)
Sauce-
1 garlic clove (minced)
¼ teaspoon ginger
¾ teaspoon crushed red pepper flakes
¼ cup apple juice
1/3 cup light brown sugar
2 tablespoon ketchup
1 tablespoon cider vinegar
½ cup water
1/3 cup soy sauce

Cooking Instructions:

Step 1: Cut chicken breasts into bit sized pieces, and if you choose lightly dust with cornstarch. Heat oil in your wok and fry chicken bits in batches until lightly browned. Drain on paper towels and set aside.

Step 2: In a bowl combine all sauce ingredients. Pour into wok and bring to a boil. Add chicken bits back to the pan, reduce the heat and simmer for 10 minutes.

Chow Mein Recipe



Ingredients:
1.5lb boneless pork chops (sliced thinly into strips)
4 garlic cloves (minced)
1 (12 oz) package chow mein noodles
1 cup fresh bean sprouts (or canned)
2 large celery stalks (sliced)
1 medium onion (sliced)
1 (12oz) package fresh sliced mushrooms
4 cups fresh cabbage and carrot mix
2 green onions (sliced)
½ cup chicken broth
4 tablespoon oyster sauce
4 teaspoons soy sauce
salt and pepper (to taste)
2 tablespoons cornstarch
oil (for frying)

Cooking Instructions:

Step 1: Cook the chow Mein noodles according the package directions. Meanwhile, add a little bit of oil to the wok. Add pork strips and garlic and stir fry until fully cooked. Remove from the wok and set aside.
Step 2: Add a little more oil. Add all of the vegetables expect the green onion to the wok. Stir fry until the vegetables are as tender as you like them.

Step 3: Push the vegetables to the side creating a well In the middle of the wok. One by one add chicken broth, soy sauce, oyster sauce, salt and pepper. Mix well. Bring to a slow boil. Mix 2 tablespoons of cornstarch with a little bit of cold water. While stirring pour cornstarch/water mixture into the sauce. Return pork to the wok. Reduce heat and simmer for 5 minutes.
Step 4: Mix the vegetables mixture with the chow Mein noodles in a large bowl. Top with sliced green onions. Serve.

Chicken Pot Pie Recipe



Ingredients:
2 prepared pie crusts (homemade or store bought)
1/8 teaspoon poppy seed
1 pinch seasoning salt
Filling-
3 tablespoons butter
1 onion (sliced)
½ cup celery (diced)
1 cup carrot (sliced)
1 cup potatoes (diced)
8 ounces fresh mushrooms (sliced)
3 garlic cloves (minced)
1 tablespoon fresh parsley (chopped)
1 teaspoon thyme
1 pinch red pepper flakes
¼ teaspoon ground sage
salt and pepper (to taste)
3 tablespoons flour
2 cups chicken broth
2 cups cooked chicken (diced)

Cooking Instructions:

Step 1:
Preheat the oven to 425 degrees and press one curst onto the bottom and up the sides of a 9” pie plate.
Step 2: In a large pan melt butter and add celery, onion, carrots, potatoes, mushrooms, and garlic. Stir fry for 5 minutes. Add parsley, red pepper flakes, thyme, sage, salt and pepper to the pan. Mix well. Sprinkle with flour and mix again. Add chicken stock and simmer for 5 minutes or until mixture is thickened. Add chicken bits to the mixture and mix well.

Step 3: Pour mixture into the prepared pie dish. Top with the second crust and crimp sides to seal. Lightly wet the top and sprinkle with season salt and poppy seeds.

Step 4: Bake in the oven at 425 degrees and bake for 15 minutes. After 15 minutes reduce heat to 350 degrees and bake for 45 minutes. Remove from oven and let cool for 15 minutes before serving.

Bean Burrito Recipe



Ingredients:
1 (16oz) can refried beans
1 cup rice (cooked)
1 cup salsa
2 cups shredded cheddar cheese (divided)
12 (6 inch) flour tortillas
tomatoes (diced, to serve)
sour cream (to serve)

Cooking Instructions:

Step 1:
In a large bowl combine refried beans, salsa, rice and 1 cup of cheddar cheese. Mix well.
Step 2: Spoon about 1/3 of a cup of the mixture into the center of a tortilla. Fold up both of the sides and grab the bottom end and roll up. Repeat until are burritos have been wrapped.

Step 3: Arrange burritos in a greased baking dish, and top each burrito with cheddar cheese. Cover and place into the oven. Bake at 375 degrees for 25 minutes. Serve with tomatoes, sour cream and lettuce if desired.

Peanut Butter Fudge Recipe



Ingredients:
3 cups sugar
3 tablespoons cocoa
¼ teaspoon cream of tar tar
1 cup evaporated milk
3 tablespoons light corn syrup
½ cup margarine
1 teaspoon vanilla
1 ½ cups peanut butter
2 cups chopped walnuts

Cooking Instructions:

Step 1: Butter an 11 x 7 inch baking dish. In a 3 quart sauce pan cocoa, sugar and cream of tar tar. Add evaporated milk, corn syrup, and margarine. Cook over medium high heat stirring until mixture boils.
Step 2: Clip a candy thermometer onto the pan. Reduce heat to medium. Continue to cook stirring until temperature reaches 238 degrees. Remove from heat. Add vanilla and peanut butter. Mix well and fold in nuts.

Step 3: Pour mixture into pan. Allow to cool.

Chicken Manchurian Recipe



Ingredients:
1lb boneless skinless chicken breasts (cut into 1” pieces)
1 ½ tablespoons flour
1 ½ tablespoons corn starch
1 egg
salt and pepper (to taste)
1 large onion (sliced)
Sauce-
½ cup chicken broth
¼ cup ketchup
¼ cup tomato puree
3 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon garlic (minced)
1 tablespoon ginger (minced)
2 tablespoons water
1 tablespoon cornstarch
fresh cilantro (chopped, for garnish)
oil (for frying)

Cooking Instructions:

Step 1:
In a bowl mix together flour, 1 ½ teaspoon cornstarch, egg, salt and pepper. If batter is too thick add a tiny bit of water to thin it out. Dip chicken pieces into batter, coat well and deep fry chicken pieces in batches in your deep fryer at 375 degrees until golden brown. Drain on paper towels and keep warm until needed.

Step 2: Add a tiny bit of oil to your wok and stir fry slices onions for about 1 minute. Add garlic and ginger stir fry for 30 seconds. Add chicken broth, ketchup, tomato puree, soy sauce, and sugar. Mix well stirring and bring to a boil. Combine 2 tablespoons cornstarch with 1 tablespoon cold water and pour into mixture while stirring. Cook until sauce thickens.
Step 3: In a bowl pour the sauce over the chicken pieces. Mix well and top with chopped fresh cilantro. Serve with white rice.

Coconut Macaroons Recipe



Ingredients:
1 1/3 cups flaked coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 egg whites
½ teaspoon vanilla extract

Cooking Instructions:

Step 1: Pre-heat oven to 325 degrees. In a small bowl mix together coconut, sugar, flour, and salt. Stir in egg whites and vanilla extract. Mix well.
Step 2: Grease a baking sheet and drop mixture by the rounded teaspoon onto the baking sheet.
Step 3: Bake at 325 degrees for 18-20 minutes. Allow to cool.

Pumpkin Bread Recipe



Ingredients:
2 cups canned pumpkin (or homemade pumpkin puree)
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon nutmeg
¾ teaspoon ground cloves

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. In a large bowl combine pumpkin, sugar, water, oil and eggs. Beat together until mixed well.
Step 2: In a separate bowl sift together flour, baking soda, baking powder, cinnamon, salt, nutmeg and cloves.
Step 3: Slowly mix the dry ingredients with the wet ingredients beating until smooth.

Step 4: Grease two 9 x 5 inch loaf pans. Pour the better into the 2 loaf pans evenly dividing the batter between the two. Bake at 350 degrees for 60-70 minutes or until a toothpick comes out clean. Remove from oven and allow loafs to cool.

Steak Quesadilla Recipe



Ingredients:
½ lb sirloin steak
1 green pepper (diced)
1 onion (chopped)
1 garlic clove (minced)
1 tablespoon cilantro (minced)
¼ teaspoon dried rosemary (crushed)
4 (6 inch) flour tortillas
1 roma tomato (diced)
¼ cup fresh sliced mushrooms
1 ½ cups mozzarella cheese
oil (for cooking)

Cooking Instructions:

Step 1: Put steak on the grill and cook until the steak reaches desired doneness (I usually like mine about med-rare). Remove from grill and allow the steak to cool a little. Slice steak into thin strips.
Step 2: Add a tiny bit of oil to a large pan. Sauté peppers, onion, garlic and mushrooms until tender. Sprinkle top of the vegetables with cilantro and rosemary.

Step 3: Place 1 tortilla onto the bottom of the pan. Lay out a layer of cheese a layer of cheese (about ¼ cup), then about half of the sliced steak. Then with a slotted spoon add a layer of the pepper mixture. Top with tomatoes and another layer of cheese. Add another tortilla on top. When the bottom tortilla is lightly browned and cheese has started to melt, flip and cook on the opposite side. Cut into wedges and serve.

Thai Peanut Chicken Recipe



Ingredients:
1lb boneless skinless chicken breasts (cut into 1” chunks)
3 tablespoons fresh garlic (minced)
1 ½ tablespoons fresh ginger (minced)
oil (for cooking)
¾ cup green onions (chopped)
1 red bell pepper (sliced)
1/3 cup dry roasted peanuts
Sauce-
3 tablespoons soy sauce
2 tablespoons creamy peanut butter
2 teaspoons white wine vinegar
1 teaspoon sesame oil
1 teaspoons brown sugar
¼ teaspoons cayenne pepper (or more to your taste)
¼ cup water

Cooking Instructions:

Step 1: to make the peanut sauce – In a bowl mix soy sauce, peanut butter. Add white wine vinegar, sesame oil, brown sugar and cayenne pepper. Mix well and set aside.
Step 2: in large skillet heat oil. Add garlic, ginger and chicken. Cook until chicken is no longer pink inside (about 5 minutes). Remove from pan and set aside.

Step 3: Add a tiny bit more oil to the pan and stir fry red bell peppers and green onions for about 2 minutes or until they have reached desired tenderness. Remove from pan and set aside.
Step 4: Over medium heat add the peanut sauce mixture to the pan. Heat while stirring constantly. When sauce mixture starts to bubble add ¼ cup of water and mix well to thin it out a bit.

Step 5: In a large serving dish add chicken, green onions, red bell pepper, and roasted peanuts. Add sauce and mix well. Serve with white rice.

Pumpkin Cookies Recipe



Ingredients:
2 ½ cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
½ teaspoons nutmeg
½ teaspoon cloves
½ teaspoon salt
½ cup butter (softened)
1 ½ cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
Glaze-
2 cups confectioners sugar
3 tablespoons milk
1 tablespoon butter (melted)
1 teaspoon vanilla extract

Cooking Instructions:

Step 1: Pre-heat the oven to 350 degrees. In a bowl combine flour, baking soda, baking powder, cinnamon, nutmeg, cloves and salt. Set aside.
Step 2: In a separate bowl cream butter and sugar. Add pumpkin puree, egg and 1 teaspoon vanilla extract. Beat until creamy. Mix in dry ingredients until well combined. Drop on a cookie sheet by the tablespoon fools. Flatten slightly.

Step 3: Bake for 15-20 minutes. Remove from oven and allow the cookies to cool.

Step 4: While cookies are cooling to make the glaze – Combine confectioner’s sugar, milk, butter and vanilla. Mix well.
Step 5: Drizzle glaze onto cookies with a fork.

Chocolate Chip Pancakes Recipe



Ingredients:
1 ¼ cups flour
1 tablespoon sugar
¼ teaspoon cinnamon
1 tablespoon baking powder
¼ teaspoon salt
2 eggs
1 cup milk
4 tablespoons melted butter
¾ teaspoon vanilla extract
1 cup chocolate chips

Cooking Instructions:

Step 1: Combine flour, sugar, cinnamon, baking powder and salt in a large bowl.
Step 2: In a separate bowl mix together eggs, milk, butter, and vanilla. Beat the wet ingredients with the dry mixture until smooth. Fold in chocolate chips.

Step 3: Heat pan or griddle. Pour or spoon batter into pan (each pancake should be about ½ cup of batter).
Step 4: Flip the pancake when the top begins to bubble. Fry for 1 minute. Remove from pan and repeat until batter is gone.

Chicken Quesadilla Recipe



Ingredients:
2 flour tortillas
2 tablespoons butter
1 ½ cups cooked chicken (diced small)
4 slices cooked, crispy bacon (crumbled)
½ cup fresh tomato (diced)
2 tablespoons red onions (finely chopped)
1 cup shredded cheddar cheese
4 tablespoons barbeque sauce

Cooking Instructions:

Step 1: If not using left over chicken – cook chicken by preferably grilling. Dice cooked chicken into small chunks and set aside.

Step 2: Butter the bottom of a flour tortilla. Place buttered side down in a nonstick skillet.
Step 3: Sprinkle tortilla evenly with cheese. On one side of the tortilla evenly sprinkle chicken, bacon, tomatoes and onion. Drizzle with barbeque sauce. Fold one side of the tortilla over the top and press down with a spatula. Remove from pan and repeat with the second.

Crab Cakes Recipe



Ingredients:
1lb lump crab (canned or fresh)
½ cup breadcrumbs
2 eggs
¼ cup mayonnaise
1 teaspoon old bay seasoning
¼ teaspoon pepper
2 tablespoons Worcestershire sauce
1 teaspoon dry mustard
oil (for frying)
lemon wedges (to serve)
tartar sauce (to serve)


Cooking Instructions:

Step 1: In a medium bowl mix together eggs, mayo, old bay seasoning, pepper, Worcestershire sauce and mustard until creamy. Add bread crumbs and mix in evenly. Last, add in crab meat and mix evenly.
Step 2: Shape into patties (you should get about 6-9 depending on the size).

Step 3: Heat a little bit of oil in a sauté pan. Sauté crab cakes in batches for about 5 minutes on each side. Try and keep an eye on them to make sure they are not burning on the bottom. Drain on paper towels. Serve with lemon wedges and tartar sauce.

Chinese Honey Chicken Recipe



Ingredients:
1 ½ lbs boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
Batter-
4 tablespoons cornstarch
¼ cup flour
1 teaspoon baking powder
½ cup water
½ teaspoon salt
1 egg
1 egg white
Sauce-
1 ½ tablespoons oil
2 teaspoon ginger (minced)
3 tablespoons garlic (minced)
1 teaspoon salt
3 tablespoons honey
1 teaspoon rice wine vinegar
½ cup water
1 teaspoon cornstarch (mixed with 1 teaspoon water)
Sesame seeds (for garnish)

Cooking Instructions:

Step 1: In a large bowl mix all batter ingredients together until smooth. Cover and allow the batter to site for at least 30 minutes. Add the chicken to the batter tossing to coat.
Step 2: Heat a deep fryer to 350 degrees. Fry chicken bits in patches for 2 minutes or until batter becomes firm. Drain on paper towels.

Step 3: To make the sauce. Heat 1 ½ tablespoons of oil in your wok. Add garlic and ginger and stir fry for 30 seconds. Add salt, honey, vinegar, and water. Mix well. Combine 1 teaspoon of water with 1 teaspoon of cornstarch. Add to the sauce and Simmer for 2 minutes.
Step 4: Coat chicken with the sauce and garnish with sesame seeds. Serve with white rice.

Breakfast Burritos Recipe



Ingredients:
1lb sliced bacon (cooked until crispy)
10 eggs (scrambled)
1 (16 oz) can refried beans
8 oz shredded cheddar cheese
10 (10”) flour tortillas

Cooking Instructions:

Step 1: Cook bacon until crispy. Drain on paper towels.
Step 2: In a large bowl beat eggs together. Cook and scramble the eggs with a little bit of butter of cooking spray in a skillet. Remove from pan and set aside.

Step 3: On the stove top or in the microwave warm refried beans. Heat tortillas in the microwave for a few seconds between 2 sheets of toweling.
Step 4: In the center of each tortilla put thin layer refried beans, 2 strips of bacon, some eggs and cheese. Roll into burritos by folding the corners towards the center, grabbing the bottom and then rolling up. Repeat until all burritos are rolled.
Step 5: Heat each burrito in a skillet on both sides until browned.

Vegetable Lo Mein Recipe



Ingredients:
8 ounces linguini, spaghetti or vermicelli noodles (cooked until al dente)
¼ cup vegetable oil
1 teaspoon dried red pepper flakes
2 cups fresh mushrooms (sliced)
1 carrot (peeled and sliced into thin strips)
1 red bell pepper (sliced)
1 onion (sliced)
2 tablespoons garlic (minced)
2 teaspoons ginger (minced)
1 green onion (chopped)
1 tablespoon cornstarch
1 cup chicken broth
¼ cup hoisin sauce
2 tablespoons honey
1 tablespoon soy sauce
¼ teaspoon curry powder

Step 1: In a small bowl mix together chicken broth and cornstarch. Set aside. Heat oil in a large skillet or wok. Add the red pepper flakes and stir fry for 30 seconds. Add mushrooms, carrots, onion, red pepper, garlic and ginger. Stir fry until tender. Add in green onion and stir fry for 1 minute.
Step 2: Add in the chicken broth/ cornstarch mixture along with the hoisin sauce, honey, soy sauce, and curry powder. Stirring until sauce has thickened. Season with salt and pepper to taste.

Potato Skins Recipe



Ingredients:
4 large bake potatoes (baked or microwaved until tender)
3 tablespoons vegetable oil
Oil (for deep frying)
1 tablespoon grated parmesan cheese
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon paprika
1/8 teaspoon pepper
8 slices of bacon (cooked until crispy and crumbled)
2 cups shredded cheddar cheese
½ cup sour cream
4 green onions (sliced)

Cooking Instructions:

Step 1: Cut potatoes in half lengthwise, scoop out the insides and discard leaving about ¼” of the shell.
Step 2: In a small bowl combine 3 tablespoons oil, salt, garlic powder, paprika, parmesan cheese and pepper. Brush mixture all over potato skins.

Step 3: Heat deep fryer to 365 degrees and deep fry potato skins for 5 minutes in batches. Drain on paper towels. (* to bake instead of deep fry – pre-heat oven to 475 degrees. Place skins in a greased baking dish and bake for 8 minutes. Turn over and bake for 8 minutes on that side.)
Step 4: Pre-heat the oven to 375 degrees. Place potato skins in a lightly greased baking dish and fill each skin with cheddar cheese and bacon. Divide evenly between each skin. Bake for 7 minutes or until the cheese has melted. Remove from oven and top with sour cream and green onions.

Chicken Nuggets Recipe



Ingredients:
1lb boneless skinless chicken breasts (cut into 1” chunks)
¼ cup all purpose flour
¼ teaspoon salt
¼ teaspoon garlic powder
1/8 teaspoon pepper
¼ cup milk
1 egg
½ cup dry Italian breadcrumbs
1 tablespoons grated parmesan cheese
1 tablespoon butter (melted, if baking in the oven)
Oil (if deep frying)

Cooking Instructions:

Step 1: On a plate combine flour, salt, pepper and garlic powder. In a small bowl beat egg and milk. On another plate combine bread crumbs and parmesan cheese.
Step 2: Coat chicken strips first in the flour mixture, then dip in the egg mixture and then roll in the breadcrumb mixture. Repeat until all strips are coated.

Step 3: If deep frying – Heat deep fryer to 360 degrees and deep fry chicken nuggets in batches for 6 minutes or until golden brown. Drain on paper towels.
Step 4: If baking in the oven – Heat oven to 400 degrees. Place chicken strips on a baking sheet and drizzle with melted butter. Bake in the oven for 12-15 minutes or until strips are no longer pink inside.

Crab Puffs Recipe



Ingredients:
1lb canned crab (or imitation)
½ cup celery (finely chopped)
½ cup onion (finely chopped)
4 hard boiled eggs (finely chopped)
1 tablespoon fresh parsley (minced)
1 ½ cups mayonnaise
2 tablespoons chili sauce
1 cup water
1 stick butter
1 cup flour
4 eggs

Cooking Instructions:

Step 1: In a large bowl combine crab, celery, onion, hard boiled eggs, chili sauce, and parsley. Mix well and refrigerate.
Step 2: To make the puffs – Bring 1 cup of water to a boil, add 1 stick of butter and stir until melted. Slowly add flour, a little at a time until the dough forms a ball. Allow the mixture to cool. In a separate bowl beat 4 eggs thoroughly. Stir beaten eggs into flour mixture, mix well.

Step 3: Preheat the oven to 400 degrees. Grease a baking sheet and drop flour/egg mixture by the teaspoon full onto the baking sheet. Bake for 15-18 minutes. Remove from oven and allow the puffs to cool.
Step 4: Slice each puff in half and fill with the crab mixture.

Buffalo Chicken Pizza Recipe



Ingredients:
3 boneless skinless chicken breast halves (cooked and cubed)
2 tablespoons butter (melted)
1 (2 ounce) bottle hot sauce
1 (8 ounce) bottle blue cheese dressing (or ranch)
1 (16 inch) prepared pizza crust
1 (8 ounce) bag shredded mozzarella cheese

Cooking Instructions:

Step 1: Pre-heat your oven to 425 degrees. In a small bowl combine cooked chicken cubes, hot sauce and melted butter. Mix well to coat the chicken.
Step 2: Spread blue cheese dressing over the pizza crust, just enough to cover the crust. Using the whole bottle is not necessary. Top with coated chicken cubes and mozzarella cheese.
Step 3: Bake in the oven until crust is golden brown and cheese has melted (about 10 minutes).

Chinese Chicken Wings Recipe



Ingredients:
3-4lbs chicken wings
1 cup soy sauce
1 cup water
½ cup pineapple juice
1 cup sugar
¼ cup vegetable oil
1 teaspoon garlic powder
1 teaspoon ground ginger

Cooking Instructions:

Step 1: In a large bowl combine all of the marinade ingredients. Add the chicken wings, cover and refrigerate. Marinate overnight (or longer).
Step 2: Pre-heat oven to 350 degrees. Arrange chicken wings on a foil lined baking sheet. Pour marinade over wings.
Step 3: Bake in the oven for 1 hour and 15 minutes or until wings are fully cooked.

Fried Mushrooms Recipe



Ingredients:
10 ounces whole fresh mushrooms
1 cup flour
½ cup cornstarch
¾ teaspoon baking powder
¼ teaspoon salt
1 cup water
2 cups breadcrumbs (preferably panko)

Cooking Instructions:

Step 1: In a large bowl mix flour, baking powder and salt. Add water and mix until a smooth batter has formed. Dip mushrooms into the batter and coat evenly. Allow excess batter to drip off.
Step 2: Roll the mushrooms in breadcrumbs until coated thoroughly. Repeat until all mushrooms are coated.

Fry Bread Tacos Recipe



Ingredients:
Fry bread-
2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
4 cups oil (for frying)
Toppings-
1lb ground beef
1 package taco seasoning mix
1 (15 ounce) can pinto beans
1 cup shredded cheddar cheese
2 cups shredded lettuce
2 tomatoes (diced)
½ cup picante sauce

Cooking Instructions:

Step 1: Combine pinto beans and 2 tablespoons of picante sauce in a sauce pan over low heat. Heat until heated thorough. In a large skillet cook ground beef with taco seasoning according to the package directions. Cover and keep warm.
Step 2: To make fry bread – in a bowl combine flour, baking powder and salt. Stir in milk and mix until the dough comes together and forms a ball. On floured surface kneed the dough until its smooth. Let rest for 5 minutes.
Step 3: Heat oil in a deep skillet (oil should be at least 1 ½” deep) to 365 degrees. Break off ¾ cup sized pieces of the dough and shape into round discs that are about ¼” in thickness. Make a thinner depressed area in the center. Fry the bread (1 piece at a time) in the hot oil until golden brown on both sides. Turn only once. Drain on paper towels.
Step 4: Top fry bread with beans, taco meat, tomatoes, lettuce and cheese.

Chicken Marsala Recipe



Ingredients:
4 boneless skinless chicken breasts
1 cup flour
1 tablespoon oregano
salt and pepper (to taste)
2 tablespoons olive oil
1 tablespoon butter
10 ounces fresh sliced mushrooms
4 garlic cloves (minced)
2 cups marsala wine
3 cups chicken stock
1 package linguini (cooked)

Cooking Instructions:

Step 1: 1 at a time, place chicken breasts between 2 sheets of wax paper (or plastic wrap). With a mallet pound chicken breasts until they are about ¼” thick.
Step 2: On a plate combine flour, salt and pepper, and oregano. Dredge chicken breasts in flour until coated thoroughly.
Step 3: Heat olive oil and butter in a large skillet. Fry chicken breasts until they are almost fully cooked (about 3 minutes on each side). Remove from pan and keep warm in the oven at 175 degrees.
Step 4: Deglaze the pan with marsala wine. Make sure to scrape up all the brown bits on the bottom of the pan and mix them with the wine.
Step 5: Add chicken broth mushrooms and garlic. Cook on medium-high for 10 minutes or until the sauce has reduced by half. Add chicken breasts back to the pan and cook for another 10 minutes. The sauce should now have become somewhat thick. Serve on a bed of linguini.

Chocolate Bundt Cake Recipe



Ingredients:
1 (18.25 ounce) package devils food cake mix
1 (5.9 ounce) package instantly chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs
½ cup warm water
2 cups semi sweet chocolate chips

Cooking Instructions:


Step 1: Preheat oven to 350 degrees. In a large bowl mix together devils food cake mix, chocolate pudding mix, sour cream, oil, eggs and water. Mix until smooth. Fold in chocolate chips.
Step 2: Pour batter into a greased 12 cup Bundt cake pan.
Step 3: Bake for 50-55 minutes until the top is springy to touch and until a toothpick comes out clean. Remove from oven and allow to cool.

Spaghetti Sauce Recipe



Ingredients:
2lbs Italian sausage
1 small onion (chopped)
4 garlic cloves (minced)
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
2 cups water (if simmering for only 1 hour, 1 cup)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 ½ teaspoons brown sugar
1 teaspoon
¼ teaspoon crushed red pepper flakes (or more)
¼ teaspoon pepper
¼ cup red wine

Cooking Instructions:


Step 1: In a large pot (I used a very big skillet) brown Italian sausage, breaking it up into bits as you stir. Add onions and continue to cook until they have become soft. Add garlic, diced tomatoes, tomato paste, tomato sauce, and water. Mix well.
Step 2: Add basil, parsley, brown sugar, salt, red pepper flakes, and black pepper. Mix well and bring to a slow boil. Stir in red wine.
Step 3: Simmer on low stirring frequently for at least 1 hour. Serve over cooked spaghetti noodles.

French Toast Recipe



Ingredients:
8 slices thick Texas toast bread
4 eggs
2/3 cup milk
1/3 cup flour
1/3 cup sugar
½ teaspoon vanilla
¼ teaspoon salt
1/8 teaspoon cinnamon (or more if desired)
3 tablespoons butter
powdered sugar

Cooking Instructions:


Step 1: In a shallow bowl mix together eggs, milk, flour, sugar, vanilla, salt, and cinnamon.
Step 2: Heat a large skillet or griddle. When the pan is hot add butter.
Step 3: Dip each slice of bread into the egg mixture for 30 seconds on both sides. Let the excess batter drip off and place into the skillet.

Step 4: Cook each slice on for 1 ½-2 minutes on each side or until golden brown on both sides. Repeat adding more butter to the pan if necessary until all slices have been cooked. Dust with powdered sugar.

Quiche Lorraine Recipe



Ingredients:
4 eggs
1 cup sour cream
½ cup bacon (cooked and crumbled)
¾ teaspoon salt
¾ teaspoon Worcestershire sauce
1 dash pepper
1 ½ cups cheddar cheese
1 (9 inch) pre-pared pie crust

Cooking Instructions:

Step 1:
Pre-pare the pie crust and bake in the oven at 325 degrees for 10 minutes. Remove from oven and allow it to cool completely.
Step 2: Meanwhile, in a large bowl beat eggs and add sour cream, salt, Worcestershire sauce, pepper, bacon and cheese. Pour mixture into cooled pie crust.

Buffet Style Doughnuts



Ingredients:
1 (10 count) refrigerated biscuits
1/3 cup sugar
Oil (for deep frying)

Cooking Instructions:
Step 1: Heat oil to 350 degrees. Fry disquiets 2 at a time until browned on each side. Drain on paper towels.
Step 2: Pour sugar into a container. Once the doughnuts have cooled toss them lightly in the sugar 1 at a time coating both sides.

Egg Drop Soup



Ingredients:
3 cups chicken broth
1 teaspoon salt
1 dash white pepper
1 green onion (sliced)
2 eggs (slightly beaten)

Cooking Instructions:


Step 1:
In a sauce pan heat chicken broth, salt, and white pepper. Bring to a boil.
Step 2: Pour beaten egg in a thin stream into the broth (or drizzle with a fork). Stir with a fork until the egg forms shreds. Add green onions and serve.

5 cups cooked leftover white rice (that’s at least 1 day old)
1 medium onion (diced)
6 cloves garlic (minced)
2 eggs (beaten)
1 cup frozen peas and carrots (thawed)
½ tablespoon tumeric
Soy sauce (to serve)
2 tablespoons oil (for frying)

Cooking Instructions:


Step 1: Add a little bit of oil or cooking spray to a heated fry pan. Add beaten eggs and scramble until fully cooked. Remove from heat and set aside.
Step 2: Heat a wok and add oil. Add garlic, onion, and peas and carrots. Stir fry until vegetables have reached your desired tenderness. Add rice and stir fry for 2 minutes. Add turmeric and eggs. Mix well.

Garlic Green Beans



Ingredients:
1lb fresh green beans (washed with strings removed, ends trimmed)
Sauce-
1 tablespoon black bean sauce
1 tablespoon soy sauce
1 ½ teaspoons sugar
2 teaspoons rice vinegar
1 tablespoon garlic (minced)
1 tablespoon ginger (minced)
2 green onions (minced, white part only)
½ teaspoon chili paste
3 tablespoons oil (for frying)

Cooking Instructions:


Step 1: In a small bowl combine black bean sauce, soy sauce, sugar and rice vinegar. Set aside.
Step 2: Heat your wok and add 2 tablespoons of oil. Add green beans and fry for 10 minutes or until beans have reached your desired tenderness. Remove beans from the wok.
Step 3: Add 1 tablespoon of oil to the wok. Add garlic, ginger and green onions. Stir fry for 15 seconds. Add chili paste. Add the sauce mixture a cook for a few seconds. Return beans to the pan tossing to coat. Serve.

Egg Rolls



Ingredients:
1 lb ground beef
1 package egg roll wraps
1 bad shredded cabbage and carrot mix
Salt
Pepper
Garlic powder
1 egg (beaten, for sealing)
2 eggs (cooked and scrambled)
Oil (for frying)

Cooking Instructions:


Step 1:
Fry ground beef with salt, pepper and garlic powder until beef is completely browned (tip- add the salt, pepper and garlic powder to your taste. You want the flavor to be strong but not overpowering).
Step 2: In a large bowl combine cabbage and carrot mixture, cooked ground beef mixture, and scrambled eggs.
Step 3: Lay out an egg roll wrapper. Place 1-2 tablespoons of filling in the corner of the wrapper, but not so the filling is actually touching the corner. Fold over that corner and roll about half of the way up. Fold over the left and right corners to the middle. Using a brush or the bottom of a spoon, brush the cornstarch/water mixture on the edges of the wrapper. Finish rolling up tightly and secure to make sure there are no leaks. Repeat until all the egg roll wraps are used.
Step 4: Deep fry egg rolls in batches until golden brown. Drain on paper towels.

Crab Rangoons



Ingredients:
12 ounces of cream cheese (at room temperature)
50 wan ton wrappers
1 cup imitation crab meat (or canned)
2 green onions (minced)
¼ teaspoon garlic powder
½ teaspoon soy sauce
1 egg (beaten)
oil (for frying)

Cooking Instructions:


Step 1: In a bowl cream the cream cheese, soy sauce, green onions and garlic powder. Stir in the crab meat (if using imitation crab it should be chopped into pieces).
Step 2: In a separate bowl beat 1 egg. Lay out a wanton wrapper so it forms a diamond shape and place 1 teaspoon of filling just below the center of each wrapper.
Step 3: Brush the opposite corners of the wanton wrapper with the egg mixture. Fold over the edges of the wrapper to form a triangle and seal tightly.
Step 4: Deep fry the rangoons in batches at 375 degrees for 2-3 minutes or until golden brown.

Meat on a Stick (Chicken Skewers)



Ingredients:
1lb boneless skinless chicken breasts
1 (10 ounce) bottle teriyaki marinade
1 teaspoon garlic (minced)
1/8 cup creamy peanut butter
½ teaspoon sesame oil
Wooden skewers

Cooking Instructions:


Step 1:
Cut chicken breasts into long strips. In a large bowl combine teriyaki marinade, garlic, peanut butter and sesame oil. Place chicken breasts into bowl and coat with the mixture. Marinate in the refrigerator overnight.
Step 2: Soak skewers in cold water. Slide each strips onto a skewer.
Step 3:
Cook on a grill until chicken is fully cooked. You can also do this with a broiler.

Kung Pao Chicken



Ingredients:
1lb boneless-skinless chicken breasts (cut into 1” pieces)
1 tablespoon cornstarch
2 teaspoons sesame oil
3 tablespoons green onions (chopped)
3 garlic cloves (minced)
½ teaspoon crushed red pepper flakes
½ teaspoon powdered ginger
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
1/3 cup dry roasted peanuts

Cooking Instructions:


Step 1:
combine the chicken and cornstarch in a small bowl and toss to coat. Heat sesame oil in a wok over medium heat, add chicken and stir fry 5-7 minutes or until no longer pink inside. Remove chicken from wok.
Step 2: Add green onions, garlic, red pepper flakes and powdered ginger to the wok and stir fry for 15 seconds.
Step 3: Combine vinegar, soy sauce and sugar in a small bowl. Mix well and add the sauce to the wok.
Step 4: Return chicken to the wok and coat with sauce. Stir in roasted peanuts. Heat thoroughly. Top with additional green onions if desired and serve over white rice.
